If you haven’t messed up with the file frame rates then your problem is a bad dolly/slider/not so smooth operator. You might want to try the Warp Stabilizer plugin to smooth it out.

Here’s the thing: Mattes are black and white and do not need to be in an uncompressed format.

Resolution does not matter in compressed formats. The bit rate does.

H264 is still a bit tough codec to encode. The bottleneck just might be your computer. A 3 hour encode on a 1 hour movie isn’t that impossible.

Your machine is sslloooww. What are your export settings?

The spec sheet says:
“29.97 interlaced frames per second video source can be delivered either interlaced or de-interlaced properly tagged as progressive”
But if you want to “interlace” it then just render it out as interlaced, upper fields first.

If you want better performance you won’t get it by dumping your machine full of RAM. You need CPU and possibly GPU performance. I’m not sure what GPUs the Red Giant plugins will use but I’d get one that does. Also not all effects will run realtime no matter how good your machine is.

Encore will transcode your files into standard definition if you try to make a DVD. If you wan’t an HD disc you need to get a blu-ray burner and make a blu-ray.

So what seems to be the problem with that video? Looks good to me.
