Why up convert anything?
Use Twixtor. Or Motion Optical Flow.

All you have to do is media manage your FCP project.
When you captured complete tapes the OMF export will use complete source files.
This way you get above 2GB easily.

Motion uses the GPU for most work. Just do a test and compare.
Apps like After Effects CS5 will help you more as they can use all cores and memory for rendering.

Jumpy footage ? You mean the fields are shifted?
When you use a REVERSE efffect in FCP, you need to add a shift field filter on that clip.

You need a dedicated media drive. Get a firewire harddisk to playback your ProRes media.
