Unfortunately, FCP 6 is still not that great when it comes to changing framerates.
I’d stick with Nattress’ , just kill the field shifter and tell Graeme’s filter what field dominance your source has.

AFAIK, MPEG-1 doesn’t support 16:9. You’ll need to letterbox it in FCP or use MPEG-2.

Unfortunately, you can’t play that from a laptop, since you’ll need a massive RAID for the data-rates involved.
Either get a desktop or play ProRes out of a laptop, it’s still going to look better than D5.

I’d suppose it’s a interlace problem, since you are talking about 1080i.
No projector (other than tubes) can project interlaced, you’ll need to feed it progressive or it’ll de-interlace by itself (which can be good or bad, depending on their chip). Unfortunately you can’t lay down 1080p50 to tape, which would be the perfect solution (I’ve seen that projected straight from a computer, it’s awesome).
So, your best bet is 1080p24 or 25, but you’ll have to watch out for stuttering of fast motion because of lower temporal density, you may want some motion blur.

MPEG Streamclip (our free Swiss-knife) is doing a good job and is much faster than Compressor, but if you need this regularly, do what Walter suggested: get a Kona!

AFAIK the Canon H1 has an SDI output. With that one you can capture via the Blackmagic card directly to ProRes 422 on an Intel Mac.

I second this and these folks really know their stuff, give the demo a try.
But noise on HDV is made worse by the compression, you may not get satisfactory results from any tool.
Other tools to try: Grame Nattress’ plug-ins for Apple Color have a good denoiser.
The denoiser in AE (starting from 7) is good, but slow (ex Grain Surgery).
