I think I would approach it with thinking particles.
Use your text as the Surface Emitter with pyro cluster on the Particle Geometry as the material.
Then you could use Groups to limit what effectors hit what particles.I have DPIT too but I am long way from making it work with consistancy.

I am sure you could but it not worth the effort. Fluid simulation in Cinema is difficult and hard to render.
Blender fluids are fairly simple to set up and its free.https://www.blender.org/
You just make the object (in this case text) place it in a big cube call the big cube an enviroment and swap the object to a fluid simulator and press play./randy

I applied a stick texture and it stayed in place.
You can check this sort of thing with by making a checkerboard texture (premade in the the surface drop down)Then watch with the wireframe visible.

you can use any projection type you want if it looks right.
I am played with some textures here and had no issues with the texture so long a stick texture was applyied. Can you post a file?
