If you just want to create 3D text, you can work easily with Element 3D or some other 3D application.
Creating bunch of layers in z-space will create this problem if you use Collapse Transformation as they will act as individual layers while rendering.

You can try Time Remapping. Enable time remap for your footage and then make a key frame few frames before the End(or where there is a jerk). Now Easy ease the last two key frames and it will give you a smooth stop.

It is better to shoot with Green BG as you can then change the Color and its brightness , Contrast, etc to match your foreground. Also you can insert Graphic Elements that will be a plus and in some cases even you don’t have to mask out(if required) your subject because it will be on different layer already.
Just keep in mind the points required to get a good green chroma shoot.

Try to track your footage from half way in forward direction. Then do reverse tracking so that tracking will be more precise. Also try to choose a High Contrast and small point in your footage. You can also try tracking frames one by one as it will give different result.
If this doesn’t work, you can then give a try to mocha as it makes a better tracks.I don’t know any way to smooth the tracking other then doing it manually.
