If you have made the sphere editable (c on keyboard) You can select the scale tool and drag only on the blue handle (z axis) and it will get wider or thinner.

Yea the impacts will be hard to remove any squish you can bump the stiffness up to 10000 i believe Flexon really high will get it to return to its shape faster. If you are going to have several colliding you will need to make them all one object and enable self collision. Changing the mass might help reduce the squish too…just be sure to adjust the gravity to avoid an underwater look.
Using cloth is just a work around so it wont be perfect. Personally I have never been able to get good results from dynamics. So I bought Remotions Silver Bullet. Its worth the money.

I would say do it with Cloth. Maker the ball cloth and everything else collider objects.

Up vectors control the Axis of the object.
Targets control (limit) the Z axis.The fact that your plane is to the side does not matter at all. You can plug a constant with the point number into the point index input if you want them to actually be attached to the plane.
As for your collision I would make the all the balloons one object and then make them cloth and in the expert tab enable self collision. This way you can control the flex, wind, gravity from one place.
If you dont like that idea you could place a proxy balloon with a hair collider tag inside each balloon. Make the proxy the child of the balloon. This way you will get some overlap but not much. With this method you can use a bulge deformer for the flex. Just set it up with expresso to increase strength when it is X amount of units from the other balloons.

Sounds like your looking more for motion Capture than tracking.
If you were to animate over some one I would just put the video in the background and trace the animation. But thats not something you can do in real time by any means.
Also if you are doing this in real time You should look onto Dataton Watch Out its great for incorporating live stuff into a pre-made sequence./Randy

You can weight the edges so the hyper nurbs does’nt effect them. Select the edges you want and hold down the full stop key (that is the period (.) ) And drag the mouse to your right.

-Draw the spline you want to grow along.
-Create your text spline
-Get a sweep nurbs (it in the same place as the extrude nurbs)
-Now place the text and the Spline as children of the Sweep (just like an extruder) The top child will be the shape (ie. text) and the second child will be the path (ie. your spline.)
– Select the Sweep Nurbs and in the attributes manager (lower corner) there is a Growth option that says 100%. Beside that is a little circle. If you Control click that circle it will turn red indicating you set a key frame. Go to a new frame change the % and set another key frame./randy

I think you wanna hit it all over with the knife tool from every angle then try fragmenting it.
For the fall you may want to look at remotions silver bullet.
