Look in the help files for stuff about layer masking. It’s the best way to cut a layer out. You don’t actually lose the pixel information, it’s still there if you need it. (Not quick mask, layer mask – there’s a big difference.)

Despite the distinct lack of picture I think I can help you. A guy called Pete Warden has created a free(!) set of plugins for After Effects. One of the plugins in the set basically does in AE what cutout does in Photoshop.

Put your shatter animation in a precomp and then time remap the precomp.
Check the manual for precomposing and time remapping. (For time remapping you’d just need to reverse the keyframes)

Without seeing a picture of what you’re referring to I can’t really help.
But there is one cool thing you might find fun. Duplicate your layer, desaturate it, turn the blending mode to overlay.
Experiment with different levels of desaturation and opacity. (I love using adjustment layers grouped with the copy.)

I find the best way to cut something out from the background is using a Wacom tablet and layer masks.
If the background is a somewhat different colour than what I’m wanting to cut out I will sometimes start with using a selection based off of a colour channel. Go to the channels pallete and click on each channel, find the one with the best contrast, copy it. Ctrl+click the copy. (If you’re on a Mac, sorry I don’t know; you’ll have to figure it out.) Then go back and click on your layer in the layers pallete. Then click the create layer mask button. You’ll have the selection based off of the colour channel masking it out. Use levels on the mask to tighten it up. Then use your Wacom tablet to finish the job.
