Are you running the Avid uncompressed or at 5.1 DV compression?
As your title says, Nasty DV Artifacting.

IMHO, you can do much better than an out dated DSR-250 for a broadcast camera,
which will give you the same image quality as a Sony PD150.

If you were to give us a budget, we might be able to better direct you in the right direction.

I’d use a hard wired Lav in one channel,
and a hard wired Shotgun mic on a boom in the second channel.

If you need to view the video full screen,
You might try using the firewire out from your G5 to a DV VTR.
Make your Ref. video using the DV codec, and adjust the offset as needed in the ProTools pulldown menu.
Attach the DV VTR to an NTSC or PAL monitor and you have full screen video playback.

Without knowing the room size, off the top of my head I’d say have a look at
a Sennheiser MKH 416, or a Sanken CS-1.

But your best bet would be to have an audio professional who knows field production
have a look at the set, and discuss shots with you.

Sounds like you are doing a digital transfer.
In order to adjust the audio levels upon transfer,
you will need to use the analog audio outputs from the deck.

My guess is that more people are using a more universal 48v phantom power version.

What was the level on the audio meters when recording?
