That’s not going to work if the added background is in focus! Agree otherwise though.
Are you sure you need 300/s shutter speed? I’ve shot dancing at 150/s (and then added motion blur later in AE) and it turned out fine.
Neat video noise reduction before keying works wonders.

The closest I’ve got is having the markers panel open, dropping a marker in the timeline, extending the duration in the marker window with the mouse, then clicking in the comment box and typing. This doesn’t stop playback but is obviously very mouse-heavy and cumbersome.
Prelude will do what you want although it’s no use to me for various workflow reasons.
I tested Resolve a few months ago to see if it will do this – it stops playback when you edit a marker but then starts it again when you finish typing and press enter. I could get used to that and as I remember you can do everything from the keyboard (is this right?) so I’ll be giving Resolve another go in the future.

I was under the impression that the Mk 2 has a picture profile modelled on the Sony Venice but that all of the other picture profiles are identical to the Mk 1.

With such a short sound you might even get away with using someone else’s voice.

You match the colour temp to the lights in the room.
I wouldn’t bother with an on-camera light though, personally. I’d expect a delivery room to be well lit. Even if it isn’t, I’d rather have a bit of extra noise than ugly on-camera light.

Effects (including colour correction) in PPro are calculated in 32-bit float. This isn’t going to improve the quality of 8-bit material but it does mean that inserting an upconversion stage (prores transcode or proxies) for quality reasons makes no sense.
Prores is useful for archive and reducing stress on systems (it’s less CPU intensive). The idea that it will increase bit depth giving you more latitude for colour correction is a myth that will apparently never die.
