They are both great cards and will do a good job for Premiere real time preview. The 780 will be better since it has more CUDA cores and a faster 384bit interface, but the 760 will do as well.
As far as AE goes, there’s no real time preview, only faster rendering.

From your description it sounds that you want to isolate the man in the shot. Since the man is waking there is no way of just applying a track to mask – you need to cut him out Roto brush may work but Mocha will help you for sure to cut a mask for him.

screen recording software is your best bet- you can get clean high quality footage with Camtasia- used a lot for tutorials. FRAPS or Bandicam are used by gamers to capture game footage and also do a good job.

You are running in a physical limitation – 25 fps will not be as smooth as 30 or 50 or 60fps.
Adding motion blur will smooth out the movement but you’ll end up with softer edges for moving graphics.

You are correct – in CS6 and CC the CC Light Rays effect is limited to the box created by the text size. The workaround is to precomp the text and apply CC Light Rays to the precomp. I have no idea why that is – submit that as a bug to Adobe.
