There is no need for YOU to downgrade. Let your clients know that they can open 5.1 or 5.0 projects via XML. Here is the tutorial:

For future reference, you can have multiple versions of FCP on the same system.

The P2 workflow and FS-100 workflow for FCP are different. Currently, the FS-100 does not support Native frame rate recording. An update IS coming. The HVX-200 can be set to 720 24P, 24PA, 30P or 60i or 1080 24PA. On import, make sure you have Remove Duplicate/Adv. pull-down frames. This will allow you to edit in a 23.98 timeline. With the exception of 60i.

You will be fine with the standard HD and RAM that comes with the MBPro. There are no advantages to upgrading other than spending more money that you can use for external storage. Wait until RAM prices drop.

As far as external storage, OWC, Weibetech and G-tech are great resources.
OWC has a the best deal on a 1TB (2-500GB) eSATA External Build-it-Yourself kit that INCLUDES the SATA Controller Card for $495.

You will need to get a Serial ATA ExpressCard/34 ($120) if you go with external SATA.

FW800 drives are fast enough for what you do.

Yes you will get 5.1, but you will receive the Academic Version. When and if a newer version of FCP is released, you can not upgrade to the newer version. Your serial number is tagged as academic.

Once you go Mac, you will never go back! FCP is VERY stable. You will not be disappointed.

Boris works very well with FCP. There are many third party plug-ins that work with FCP.
