    Do everything in 1080. When you are finished, export QT Movie current settings. Let Compressor do the downsizing for you. 640×360, 360×120

    Good luck finding the upgrade or full retail version. FCS 3 has been discontinued. Your alternatives are FCP X, Adobe CS 6 (your best option) or Avid Media Composer 6.5.

    To maintain quality, I would create this in Motion. Re-type your text using a 1280x720p ProRes setting.

    USB is going to give you a 1:1 transfer ratio. That is the limitation of USB 2 speed. If you want a faster transfer, you will need the PCD-35.
