However QuickTime (since v6) does have a DV Video Track Pitch setting in the Apple FireWire Video Out Settings dialogue box, with DV. DVCAM and LP options.
This control manifests itself in FCP (when a FW device is detected) in Audio/Video Settings>A/V Devices>Playback Output:Video>Options.

Presumable you have to be outputting to a device that can record LP under device control.

If it is its probably too soon – a reality distortion-field moment 🙁
Because as I read about it, multiple processors impose a significant cache-coherence latency, which requires real-time software to be re-written to give a real-world speed-bump.

And because FCP needs something of a ground-up re-write anyway, to overcome its underlying circa-1997 project file architecture 🙁

I wrote a post earlier today (which I now realise has gone on the end of a long-dead thread from September last year)
likening an FCP project’s database to an Inca quipu – string with knots in it.

No amount of rope-spinning, and extra-fancy knotting, is going to make it into a robust relational database, so likely we won’t get unbreakable media management integrity or project asset manipulation reliability.

Atahualpa speaks – “get knotting”, and so we’ll all get knotted! LOL

Are the files recorded in .dv DV-stream mode – as used in iMovie?

You need a MacBook Pro with an Express Card slot to add SATA or FW800 to a laptop.
The AJA Io or Io LD only work with Final Cut Pro I think. It is the only way to get a laptop connected via SDI to a DigiBeta deck.

The Kona or Decklink PCI/PCIe cards only work with a G5/Mac Pro Tower, and no doubt are as easy to set-up as the Io.
I haven’t used them, but I think they can give preview output from other applications.

Quick and dirty:
Play the subtitled DVD in a DVD player, with S-Video or Component out being routed inro a Beta recorder.
(Assuming you’ve got an NTSC DVD).

If the movie artifacts are too noticeable, you could burn a new DVD from your DVD SP project with no video, just subtitles (replace all the movie tracks with black slugs) and capture a DVD play-out of subtitles only into your computer, and then after checking for sync slippage, screen-mode composite, or matte, or wipe the subtitles over your edit timeline, render and playout to Beta.

Proper full-res way I suppose is to make graphics of the sub-titles then rebuild your project painstakingly 😉

Working with GarageBand is something of a pain on two 24″ Apple monitors – its the vertical height that means I’m constantly scrolling up/down the tracks when using the orchestral Jam Pack sound generators (which are absolutely excellent 🙂 ).
So for that I covet a 30″ display.
For FCP two 24″ screens are fine – too wide for everyday editing, but useful if I’ve got two big projects open at the same time for consolidating assets from project to project.
