select the layer that you are using as a guide in your comp. then go to the layer menu, select ‘guide layer.’ now, unless you’ve changed the ‘best settings’ in your render settings, it won’t render. if you click the render settings you can see the setting for guide layers (normally set to off).

keep in mind, your 1500 won’t go very far if you need to get different versions of your software to run on a different platform.
currently ae will run better in windows than osx on an intel mac (i’ve read that ae runs better in windows on a mac pro than it does in osx on the same mac pro). that may change with the next version of ae, but i bet they’ll be pretty equal.
unless there is a specific reason you want to change platforms, i would stick with what you’re on.

i’m a little unclear on what you exacttly want to do…
if you need to reverse your matte, you can use the inverted matte option from the track matte puldown, so the text is revealed by the ink spots.
if you want to use the text as the matte, so the ink fills in the letters (which may be nearly the same effect as above) place your text above the ink layer and set the ink layer to use the text as a alpha track matte.
if you want the edges of the letters to ‘spread’ as ink might do, you can use the simple choker effect, and animate the choke into negative numbers.
you could do the same effect on the ink spot if that need to continue to spread, to fill the screen perhaps.

you can change the interpret footage settings at any point, not just at import, and it will then effect how the footage is interpretted in comps that use it. try setting the interpret footage setting for pixel aspect ratio of a clip to something different and take a look at how it looks in a comp, then change it back and take a look again (make sure the aspect ration correction option is off in the preview)

you really just need to know what they need… if your media file is going to get transfered to film, then the company transferring it to film will have specs for the various film sizes. if your media will be shown through a video projector, then there should be some specs for that as well.

if the grey buzz is the result of a fine texture/pattern on the jacket, you may be able to fix it with effects like remove grain or dust & scratches. both will try to eliminate fine, higher contrast detail which may help what you’re seeing.

you might try using the ‘purge every XX frames’ setting in the ‘secret’ pref. to get the secret pref hold the shift key and select the any pref pane from the pref menu. then find secret at the bottom of the pulldown menu in the pref pane. set the purge frames to a number less than the number of frames ae was able to render of your comp (ie, if it crashed after 15 frames try setting to 10).

when you want to render your comp and select ‘make movie’ or ‘add to render queue’ and the render queue pops up. select the ‘render settings’ (probably set to ‘best sttings’). this brings up the render settings pane. about halfway down is a setting for ‘field render,’ select ‘off.’

ok, this looks like an interlace issue. try rendering without fields on.
although it’s strange that you’re seeing this effect in your ram preview too (ram previews usually do not render in fields, but this does look like an interlace issue).

next time you might see if you can get the film captured to files rather than tape. just see if they can capture the codec and file format that you want to work in. then, rather than tapes getting delivered, you get hard drives. you’ll gain quality and save the steps of having to recapture your footage from tape.
you should always try to avoid using intermediate formats/codecs that are lossy if you want to work in uncompressed or lossless codecs.
