disconnect the source from the audio track. Next to the green audio buttons, you’ll see two connected icons that will say a1 and A1. click a1. it should move a little to the left. Repeat for track 2. now drop your broll on the timeline, and no audio will come with it.
To expand on the principle. if you drag a1 to A3, and a2 to A4, when you place your clip on the timeline, the audio will land on A3 and A4.

In a situation like this, I would patch a wireless mic transmitter into the band’s mixer board. Any semi-decent band should be using a board that has an Aux Return, which is usually a 1/4″. Patch the transmitter to this, setting the transmitter to line. Make the adjustments to your reciever and camera to keep it within acceptable range, and you’ll get the cleanest mix you can. Best part of this is that you get the band audio on one track for a clean mix.

Are you referring to closed captioning? if so, there’s no easy/cheap/free way to do this withing FCP. You’ll have to send it out to a captioning service. Global Video in Chicago does good work with quick turnaround.

try the splash screen when you select “about final cut pro” when the program is open. I believe the serial # is listed there.

Find out their preferred delivery format, and go from there. Is laying to tape an option?

create a droplet in compressor of your favorite export settings and let it live on your desktop. Then, export a self-contained movie. Drop the movie onto the droplet, and compressor will do the rest.

There’s a switch for each input on the z1u for phantom power if needed, right next to the xlr connection. Switch the camera mic volume control to manual, and boost the volume there.
