You should export first to a QT reference file before using Compressor to output your compressed files rather than using Compressor right off the timeline. Compressor off the timeline takes an inordinate of time because it uses “segmented” variable rate compression, with which it essentially computes separate compression schemes for each segment on the timeline. Nests are particularly time consuming because it requires multiple computations referenceing back to shots on the original timeline.

One of the upgrades, possibly 5.03 to 5.04 is known to blow away the HDV codecs on some computers. It happened to a freind of mine when he upgraded, but not to me. He got the codec from another machine and installed it manually. All was fine afterward. So, if you have any friends with FCP just ask them to give you the codec.

I’d go with either Pioneer or Plextor, they are consistently the best rated DVD burners. I’m not a big fan of Lacie products.

Go to Easy Setup and select DV NTSC and see if the controls come back.

Sounds like a recipe for unhappiness even if you get get all the conversions right. What is your end market for this project? Under any circumstances the DV will not look very good when uprezed to HD or HDV. On the other hand, down converting the HDV to DV will look great… Are you absolutely dead set on finishing HD or HDV?
