Another way is to Make only one text layer and arrange the text in it in such a way so that the right text is on right box and then apply the preset that I have told earlier.

There is a preset in text animation “Straight in multi lines”.
Select the text layer of box one and apply this preset(you can search it in Adobe Bridge>Text>Animate in.Double click on it and you animation will be applied from where you have you CTC.
Now press U to see the Offset key frame as required.
You may have to tweak some settings in the Animator 1 property of text.

Convert the keyframes where the animation wiggles into linear.
To do this:
1. select the key frames that will keep the button still.
2. Right click on them.
3. Choose key frame interpolation ans select Linear as Spatial interpolation.Vishesh Arora

Once you will get the outline of actor correctly then you can use Auto Trace option for creating the garbage map. It will consume a little bit time though.

If the animated person is eating that pile of food in one go then you can make a matte layer of the animated man and use it as Alpha Inverted matte for the food layer. This will save your time and gives you clean edges.
Can’t say much without seeing the animation.

To arrange the projects into folders in windows or mac
The best way to keep AE files is in a Folder with the Project Name and all the Footage used in it in a “Footage” folder.
In AE, If you go to File> Collect Files and choose Collect Source file – All.
This will give you the AE files and footage in a well managed way.
Inside the AE project panel, how do you arrange the folders ?? I usually follow the structure (final comp/ precomps / resources / solids )
