Some of the adjustment effects in Premiere Pro have “auto” options that will attempt to do this. It can be processor intensive, though, so make sure to render the timeline.

Have you moved the clips from the Firestore to an internal drive yet? It could be an issue with how Premiere is pulling the data off the drive.
Otherwise I would go ahead and compare it to capturing from tape.

To make the pause, you’ll just have to build that into your background animation in AE. The music will play continuously while the menu plays.
For the fade out part, you need to create the animation in AE, and then use it as a menu transition. That is, set the link for your button to go to this animation (in a timeline), and set the end action of that timeline to go to the actual video you want to play.

You can do this fairly easily in After Effects. I don’t know of any plug-ins that can do this, but I don’t know everything.

If you’re going to do this with After Effects, AE has an option to set a text object to follow a mask. Simple.
In Photoshop, you can draw a path, and then when you put the text cursor over it and click, you’ll be able to type along the path. (You’ll know you’re choosing the path because the cursor will change so the baseline crossing I-bar becomes slanted.) To draw a circle for this purpose, select the Ellipse tool and in the Options bar click on the Paths option on the left (the box in the middle with a pen over the rectangle). Hold shift while you drag to draw the circle.

Ah, I misunderstood. I thought you had a whole layer (ie., a clip or piece of footage) that was missing, not just single frames out of a sequence of frames.
Yeah, the only thing you can do (as mentioned previously) is replace the missing frames manually.

DVD subtitles can’t be done in Premiere, they have to be done in the DVD authoring program. If you haven’t already done so, you can post your question to the Cow’s DVD Authoring forum, or to the forum of your authoring program of choice (Adobe Encore, Sonic DVDit, etc.).

Why don’t you just turn off the visibility of the layer?

Use the Inner Bevel style, with the direction set to Down. Tweak the other Bevel settings as it pleases your eye.
