You say nothing about your project but your encode time could be about right for a 2GHz PC.

You are likely seeing the encoder at You Tube reacting to your way-too hot audio.
Have you tried applying the limiter in the audio event F/X?

??? You have ALWAYS had the option to control updates to the O/S. The defaults are there for the lowest-common-denominator of user who would be totally lost in the Control Panel.

The port labeled “DV” is a Firewire port. (Firewire is an Apple trademark). Firewire is the proper method of capturing video from the camera and all of the record units listed above only work with Firewire. The “yellow” connector is composite video, probably the second worst connection for video copy. You may as well use a $100 security camera. The only thing worse is an RF connection, which thankfully seems to be going away with the VHS recorder (and to the best of my knowledge, never used in a camera).
I am unaware of any on-camera composite video recorder.
So, if, as you say, your Firewire ports are all toast, how are you capturing the camera/tape data now?
If you insist on using the yellow composite port, then look for a used Canopus AVCHD unit. The AVCHD-100 will work just fine as will the AVCHD-300, but the AVCHD-300 has a time-base corrector built in which helps with tape to computer capture. You will not be able to use Sony Vegas capture since that only works through Firewire.
Alternately, you could buy a deck, or fix your cameras.

Why? What are you trying to do? (The settings are probably inaccessible for a good reason).
Have you tried the hidden internal settings? Hold shift when selecting preferences and there will be an extra tab labelled “internal”
But these settings are hidden for a good reason because you can truly screw up your installation is misused.

Drobo has a reputation for being slow. I’ve never heard of G-Raid. (Must be for the Mac).
I’ve done hundreds of projects over the years and never needed RAID. I just buy another 1TB bare drive (currently $59 at Micro Center and New Egg) for each project and drop it into a desktop docking station. When the project is done, I clean up the redundant and unnecessary files then copy the whole project to a 2Tb drive for storage. I can usually fit 5 or more project archives on a 2Tb drive. Both are saved for a few months then the 1Tb drive gets reused on another project. (3Tb drives should drop below $100 by the end of the year).
If you are going to be using the drive for editing, stay away from the green drives. They slow down and even shut down to save energy. Not something you want to happen when editing.
