Add a solid layer on top of the text, turn off the eyeball switch, the use the pen tool to draw a line. Add the stroke effect to the solid, turn the eyeball back on, and tweak the stroke settings. Check out the help files to learn how to use the pen tool to best effect.

Are you comparing the behaviour of the programme to any other programme, or have you noticed a change in 7.0? In CS3 and up you can see how colour changes will appear before you apply them, which is not the case in 7.0.

If so, maybe you are experiencing the boomerang effect: see Aharon’s AE podcast on the topic here at the Cow to see how to solve this issue.
If you just mean the contents of the frame are moving about, well, I’m not so sure that that could be.

There are video demonstrations of the product there which should help you. I believe the elements are QT videos, so there shouldn’t be a problem using the files with CS4. Either way, CS3 project files can be converted to CS4 format.

When I was new, I just started with Aharon’s podcast tutorials here at the Cow. Even basic tutorials can be difficult to follow at first because there is inevitably some piece of terminology you don’t understand or a tool you don’t know how to use. But if you pick and choose what seem to be the simplest tutorials and follow through with them you’ll be fine. Even if you don’t understand – keep listening and watching those tutorials. AE is one of the most user friendly programmes out there and you’ll surely get it in the end.

You could use the shatter effect on the precomped text layer, then time remap it to slow down the shatter at the start. But this will also slow down the ‘writing’ of the text, so you may need to speed that up at the start and slow it down at the end to match the changes in the shatter. Could be tricky to match them up.

Select the layer you want to replace in the timeline panel. Then click and drag the item with which you want to replace the layer from the project panel, with the ALT key pressed, and drop it on top of the layer in the timeline panel.
You can also select multiple layers in the timeline panel to replace them all with the same item from the project panel.

With the composition open, hit ctrl+k to open the composition settings dialogue box. Increase the comp length here, then hit ok. When you zoom out, you should see the extra time.

Just increasing the size of the feature and search regions areas might help, or analysing forward by a single frame at a time and readjusting the track points should they happen to stray.
You could try increasing the contrast of the footage. You could also add the Remove Grain effect, which will lengthen the time it takes to run the track (this effect is render heavy) but may improve the quality of the track. You can then remove the effects later. Remember that you will need to pre-compose the effected footage before running the track, otherwise the tracker will just bring up the unmodified footage for tracking.
Alternatively, hit the options button in the tracker controls panel and turn on Process Before Match. Try a blur of 2-3 pixels to get rid of the grain.
I should add that some shots are pretty much impossible to track using AE’s inbuilt tools, so you may have to abandon all hope at some point. Shaky footage is better than badly tracked footage!
