As Jon says, use a monitor to view your work as you go. Big difference than your computer screen.

If the photos were shit using a tripod with no camera movement, you can bring both images into one file, i’d put the image of the tree only on the bottom layer, i’d put the layer with your subject in a layer above, and add a layer mask to the top layer and use an airbrush to remove the subject and reveal the layer below – the layer without your subject.

I don’t see a .gif there.
You can try remove white matte (layer/matting/remove white matte), or crop your image down a little more (trim it down using the lasso) to remove some of the edge artifacts.

In the layer palette, double click the layer. A window will pop up, allowing you to change the color of the layer.

What will your final output be? Large format inkjet? Offset? If it’s inkjet, reduce your resolution down – to as low as 150 dpi (try whatever setting works best for you).

Sometimes there is no easy solution. I would drag each layer over the other into one file, use on layer as your master guide, reduce opacity of layers above this so you can see your master below, then rotate your image to match.

One way to do this in Photoshop would be Threshold (Image/Adjustments/Threshold). Although, depending on the resolution of your source image, the edges may become jaggy.
I suspect this image was created in Illustrator because of the smooth edges.
