The shortcut way to lock one axis is to simply hold down the SHIFT Key and hover over the axis to be locked. Then click and leave the SHIFT key. Now you scale along the other two axis.

Well, you can always simply select all points (after conversion, because as a primitive it uses virtual intermediate points to get a smooth representation), right mouse click and use the command “subdivide” to add more points.
