If you have the latest project file and all of the media, then you select everything in the project and select File-Reconnect Media. Then just go find the files. If you have any errors, try to find out why instead of skipping through and connecting to whatever.
For editing on a MacBook Pro, I would suggest a FW800 drive.

Both programs can do this.
FCP is an editing program and will offer better realtime performance.
After Effects is a effects/graphics program and will offer you more control.

I really like the TVLogic monitors and the eCinema Pro monitor. They both looked quite good, but are certainly pricey.
My CRT monitor is one of the very few PVM series that accepted an HD signal. I found two fo them them used a couple of years ago and paid about $4500 for the pair. It was a great find!

I looked at the JVC at NAB and while I liked the colors, the off axis viewing was a major problem in my opinion. So if you’re using if for color, you should really be straight on when looking at the monitor.
I really thing that 2-3 years from now the options will be much, much better. I’m probably going to stick with my Sony PVM20/L5 for a while longer (depending on what jobs I have).
