It seems to be simple, but there are a lot of things you have to beware.

What are the exact settings of your exported QT file (other than NTSC 48khz) ? Use Compressor to encode your files, you’ll have more control and won’t have to wait for DSP to build the project to know if the asset is good.

You can demux the VOB files to .m2v and .ac3 (or .aif, .wav, the format it was originally encoded to), sync your new audio file with the encoded one and re-mux with ffmpegX (Mac). Beware of any commands you could have inserted in this VOB, they will be lost. Softwares like DVDAfterEdit allows you to red-add them. Maybe there’s a simple way to do this, I’m not so familiar with re-muxing.

Depends on which platform you want it to play: PC/Mac, DVD player ? I heard Direcotr has some features to create DVDs, but I don’t know much more. There are several auhtoring tools out there: DVD Studio Pro, Adobe Encore, DVDlab Pro, Ulead Movie Factory, etc.

Compressor’s presets are ok, but you should take more control on it. Take any preset and make the adjustments yourself: CBR/VBR, bitrate, fields, framerate, etc. Blocking often happens with fast motion video (Or quick movement), so try different settings to see what can match your video.
