You are going to be one very happy person.
With your 800 items selected, go to the layers palette flyout menu and choose >> Release To Layers Sequence. You will get a layer for each path element. Your 800 layers may all be nested within the 1 original layer, but you can flip the layer triangle in the layers palette and drag all the layers at once to the top level if needed.

You would have to convert the text to outlines, then use the flip horizontal command in the transform palette flyout menu.
You can try fooling around with anchored objects, but I could not find anythnig there and converting to outlines seems to be the best solution(though I usually try to keep things editable whenever possible).

I have CS2 PC and just wanted to report this is working fine.
I remeber seeing this duplicate after conversion problem when I used to teach InDesign and using the solid selection tool instead of the direct selection tool helped with this problem.

I know what you mean. I recently started a job where they have quark, and am now saying why can’t quark use the same keyboard shortcuts as InDesign.
After being to aggravated with Quark taking away features in 6 that use to be in 4 such as the Open Publisher (similar to edit original image in InDesign), I convinced them to buy InDesign. If I could only convert the 2 projects I inherited from Quaker to InDesign, but InDesign does not open Quark 6 and I have not utility to convert downwards in Quark. Well the printer will have to deal with making EPS files for each page so Goudy Bold does not bitmap on the PC.

A really fast way to create individual pages PDFs is to open the multipage PDF in Acrobat. Choose document >> Extract Pages >> check extract pages as seperate files.
You can also form the pages tab flyout drag individual pages to the desktop, but then you have to rename each one and darg many more times. I also find it handy to drag PDF documents from the desktop to my pages tab to insert pages, much quicker than using the menus.

Where are you seeing the file name that “27105 3445” prints as? I know of a problem on an Onyx rip, where a file prints with an old filename. Are you seeing this file name on a front end of mac or PC print monitor or on the back end of a rip???
ON your PDF problem you may want to open your PDF in Acrobat and check the File >> Document Properties >> Description Tab >> Description

Saving PDFs from Illustrator have many problems and are generally much larger in size than printing to the acrobat PDF writer. Try to save your PDF by printing and chosoe Acorbat PDF for your printer driver, and saving to a PDF that way.
What font is losing their tabs? Try switching to another font.

What happens if you save form illustrator as .tif and then in phothsop do a save to .jpg. Try use save for web from illustrator and choose jpeg there.
I have seen white backgrounds chaneg to blue due to an incorrect color mangement setup, but not the entire document. Do your images look like blue monotones. I would turn off color management temporarily and see if your problem continues.

Because of the nested layer sets in CS2 you may lose layers opening CS2 in PS7. You could in Photoshop CS2 save as your files to Phtohsop PDF and enable vector quality. For printing you will get better quality on small type than risking that your printer buitmaps the type.
If you printer needs to add bleed or such, they can open the .pdf in illustrator. You can also choose to create type to outlines when exporting to PDF to elimnate Font conflicts and having to send your fonts.

Illustrator switching to the selection tool when holding down command, is a normal function. Take a look at your edit >> keyboard shortcuts, to see if there si a problem. Do you keyboard shortcuts work in other programs?
You may want to reset your illustrator preferences by booting illustrator and immediately aftwerards holding down Command Shift Option >> the choose reset prefs.
