Maybe this from Colin James will help:

These adobe tuts should help, especially the one on pg 4:
Adobe Studio, Tips and Tutorials
https://studio.adobe.com/us/tips/main.jspYou need to sign in or register (It’s easy)
Keep motion in perspective – pg 4
Using the new Motion Tracker
Track it! -
Have you seen Dan Ebbert’s “Animating a Walk Cycle”?
https://www.creativecow.net/show.php?page=/articles/ebberts_dan/layer_looping/index.html
Click on Dan’s head above and scroll down for his other tuts, all good.
You could also youse CC Bend It or CC Bender to get smooth bends. Or you could use bend it on the pieces along with Dan’s tut.

Using Shatter, you can control the shape of the pattern (Pattern>Custom) with a custom Shatter Map, and control when it flies off with a Gradient (Gradient>Gradient Layer) and keyframe the Shatter Threshold (under Gradient).
For details of Shatter download this from Adobe:
https://www.adobe.com/products/aftereffects/indepth.html
Shatter is in pdf 4, pgs 17-26.
Lots of reading but lots of control.

If you want total control, I suppose you could slice the photo up in Photoshop putting each puzzle piece on a layer, then import into AE, then manually keyframe the pieces (each their own layer now in AE) when you want them to fly off.

There are several particle systems that will do it, Particular and Particle Illusion. Also Fractal noise makes smoke and clouds to taste, but belows is a fast and easy way, maybe it’ll work for you.
Type Text.
Shatter with 50+ repetitions, gravity 0.
In wireframe mode with Forces, you can move the forces to get an explosion the direction you want.Scatter, start at 0, go up to 50 or so by the end.
Blur to get smoke:
CC Vector Blur (I like vector blur but this is optional), directional center 0 to 15-20 at end.
Fast Blur (or your favorite blur) to taste, 0-blurry at end.Fast Blur (or your favorite blur) to taste.
Reverse the clip, there are several ways, but Time Stretch at -100 will do it.

Here’s the easiest I know of, a great one from Rick Gerard, comes with aep:
https://www.creativecow.net/forum/read_post.php?postid=103903149546207&forumid=2&archive=_2002
This is with Shatter and more for a flying fairy, or moving wand.
You can make the particles smaller with Scatter, jazz it up with Glow, change the colors, tweak away.
Another Cow solution is by Dan Ebbert’s (one of my favorites), make your own dust particles in Photoshop, then go to the moving emitter 1 and 2 comps here:
https://www.creativecow.net/show.php?forumid=2&page=/articles/ebberts_dan/particle_gen/index.html
There are other particle system solutions, that I don’t have/use, maybe someone else can get back to you on.
Scatter is a great way to break up particles if you use one of the resident CC emitters.

For fireworks all done with standard AE, click on Dan Ebberts head at the top of the page then scroll down to:
Building a 3D Particle Generator
https://www.creativecow.net/show.php?page=/articles/ebberts_dan/particle_gen/index.htmIt comes with an aep, so you can swap in you own Photoshop genertated particles if you like.
It’s 3D so a fly through is cool.
Also, Particle Illusion makes great fireworks:

The SE version is a fully functional 30 day trial, not watermarked.

Audiowaveform (without connecting to audio) makes a good neon effect as it has an inner and outer color, plus softness control. Throw on a glow and maybe a wiggle expression on the Opacity and its good.
wiggle (10, 50)
tweak to taste.
