I first thought about card dance, but i also want to have the total control over the single parts which are flying away flying away …
i hope you know what i mean and can help me …

Using Shatter, you can control the shape of the pattern (Pattern>Custom) with a custom Shatter Map, and control when it flies off with a Gradient (Gradient>Gradient Layer) and keyframe the Shatter Threshold (under Gradient).

For details of Shatter download this from Adobe:

    https://www.adobe.com/products/aftereffects/indepth.html

Shatter is in pdf 4, pgs 17-26.

Lots of reading but lots of control.

If you want total control, I suppose you could slice the photo up in Photoshop putting each puzzle piece on a layer, then import into AE, then manually keyframe the pieces (each their own layer now in AE) when you want them to fly off.
