You have a good system, although I would have preferred a Seaburg instead of a Greencreek chipset with the Harpertown. For instance the X7DWA-N.
The crashes should not occur on such a system, so there must be something else in your installed software that causes these crashes. I assume you have checked all your BIOS settings and these do not cause problems.
Have you checked your event manager logs? Anything strange?
Can you post info from Process Explorer on what is running?
Setting up a Raid array should be done from the BIOS.

In the old days you could use a binary disk editor to access the FAT and change some bits in the FAT to restore it yourself, but I think those days are over, unless you have the skills to do binary edits for the NTFS. You are lost if any disk optimization has taken place. Perry’s advise seems like the only sensible solution.

Instead of X52xx CPU’s, consider E54xx CPU’s, the Harpertown, preferably the E5472. Check that the mobo has the Intel 5400 chipset (Seaburg). Add some more disks to your system, get a good raid controller (Areca) and you should be fine.

As a rule of thumb, USB achieves an average transfer rate of 20 MB/s (depending on the number of USB devices connected) or less, fire wire 400 around 30 MB/s, fire wire 800 around 40 MB/s and eSATA around 80 MB/s. USB is good for backups, not video editing.
