Yes, it can be done relatively easily, but it is beyond the scope of what can be described on a bulletin board.

“I assume you mean “stucco” ceilings.
Any kind of close, hard surface will generate a sharp reverb back to the mic.
It would not be very practical to attempt to attach the blankets to and try to cover the ceiling.
You can place blankets around the talent on the floor and maybe drape some blankets on C-Stands just outside the frame near and around the talent.

Put a short clip of “Slug” on a video track ABOVE the highest video track you have and dissolve the Slug out or in.
That will black all video layers (and/or effects) at once.

I have used a (thinned down) ball of cotton over the mic grill very effectively, in a pinch.
Also, put the mic under the talent’s shirt.

Listen from the deck.
The audio is, by default, intentionally MUTED to the Mac’s speaker output during Log and Capture.
So you should normally monitor the audio directly from the camcorder or deck you are using to capture. (It is the preferred method.)
CAUTION:
Many people have reported that noise or “pops” appear in the captured clips if the Mac’s internal audio is left on WHILE capturing… so may want to choose “Off During Capture.”However, there is a way you can turn ON the Mac’s speaker if you really WANT to:

In FCP4x and earlier:Final Cut Pro (menu) > Audio/Video Settings… > Capture Presets (tab)
“Duplicate” the Capture Preset you are now using, when the window opens rename it (I added “MacAudioOn” to the file name).
Click open the “Advanced” button in the Audio section and turn speakers to “ON during Capture.”
The Mac speakers/audio-out will now play Audio during the preview in the Log and Capture window.

I’m going to speculate that this may have shot on a Canon camcorder.
These artifacts look like what I have seen when I tried to work with certain Canon-recorded tapes (the XL-1 was particularly problematic.)My best luck in such cases has been to bring in the camcorder that shot the tapes and either dub each tape to another DV tape via FW (preferable) or use the original camcorder as the source “deck” for the capture (not as good, but can work.)

Did you try to play any of these tapes in a different machine?
Some may be due to mis-tracking of the heads.
