I assume you mean “stucco” ceilings.
Any kind of close, hard surface will generate a sharp reverb back to the mic.
It would not be very practical to attempt to attach the blankets to and try to cover the ceiling.
You can place blankets around the talent on the floor and maybe drape some blankets on C-Stands just outside the frame near and around the talent.
