When I last spoke to the powers that be at adobe, all features in CS3 were included in the educational version. There is nothing missing.
As mentioned, upgrading is the only difference.

for the record, uncompressed or even quicktime with animation compression, isn’t really designed to play on your computer. The purpose of uncompressed video is to be passed on to another program or to lay off to tape. But generally speaking these videos contain a lot of data in a small amount of time (as Darby mentioned), so you want to watch a compressed version of the video for best playback results.

You can hitt LL to twirl down the audio waveform for a selected audio layer.
You can see spikes and ebbs in the audio, which can help decide when things will happen.
With the audio layer selected, hitting the asterisk (*) key on the number pad will add an audio marker to the layer to mark off points that you want to mark for action.
Double clicking on a given marker opens up a dialog allowing you to add notes to the marker.
hitting period on the number pad will allow you to preview the audio from the current time for 10 seconds.
While previewing the audio, and with the audio selected you can hit the asterisk key to add markers in real-time. This is especially useful for marking off beats…etc.
When working with audio, I mark off as much ahead of time as possible.

BTW – outside NY and LA and other major metropolitan areas, where cost of living is a lot less, rates vary a lot.

When I was freelancing here in NYC, good companies were paying freelance AE animators a rate of $250-$400 per 8-10 hour day based on experience. Regardless of the kind of animation. This was for strict AE work – no design. I can’t speak to anything outside that.
It may have gone up a bit, but not much. To my knowledge (based on conversations with friends who are here and in LA), most companies are still working at about this rate.
You may ask what determines that rate – what is “experience?” Part of it is speed – more experienced animators work faster because they know the tools better. But also, good sense – being able to work on your own and anticipate the needs of the client play into that as well. So even someone who knows the tools both ways to Sunday needs the experience of working for real clients and projects before they can truly become a seasoned animator.
I know that wasn’t really part of the question, but since we are talking about rate, which is often based on experience, I though I’d throw that in there.
It’s all part of the process.

there are a lot of ways to do this – none of them are free – either the cost is time and effort, or money.
to create that particular effect, you could either use Jayse’s masking method, or maybe the stroke effect or the paint tool over a path to use as a matte to reveal the vine and branches. But you have to time the animations out so the branches start “growing” on time.
Also Trapcode 3D stroke can be used to create a vine growing with varying thickness along the path (plus, again, extra paths for each of the branches are needed).
Also, if all of that seems hard, video copilot.net offers a collection of growing vine animations called Evolution.
Again there are a lot of ways – more then I’ve mentioned here, I’m sure. But hopefully these will get you started.

That question so loaded, it’s impossible to answer.
If you want to learn to do specific effects you’ve seen in commercials or tv or movies, you can ask about those effects here, and maybe we can help you figure out what effects YOU need to learn to recreate the look and feel of what you saw. In the process, hopefully you’ll learn how to do more than just that effect.
If you already have an AE foundation (that is, you know the interface and have a basic idea about animation) the best thing I can tell you is to take a look at the tons of written tutorials and hours and hours of video training available here at the cow.

if you do it that way, it should automatically update the file in AE. Even if not, if you save the file with the same name in the same location, AE should automatically update the audio in AE – even without shutting down AE (this is not always true for video). If for some reason it doesn’t, select the audio file in the project window and choose File > Reload Footage.

You’re best bet is to make your camera a 1-point camera instead of a (default) 2-point camera.
Select the camera layer and choose: Layer > Transform > Auto Orient
Set it from Point of Interest to “None” (or is it off – not in front of AE right now).
Once you do that, you can use the cameras Y rotation property to freely rotate around it’s own anchor point instead of the point of interest’s position.
