2k and eSATA is not going to work. Just forget eSATA completely for this.
You need a very high speed RAID running at least off SAS. Look at Maxx Digital, Sonnet, Small Tree and the like for an array running at least 300MB/s if not faster.
Maxx has 8 bay arrays running 500MB/s + and that’s what you want to be looking at. We run about 48TB of their storage here in both shared and local configurations.

Dpi means nothing in Video. Pixel size is the only thing that matters.
We use 72dpi only for all our images from Web to HD to film out. Your images need to be the proper pixel size and aspect ratio for your work.
As for the shimmering in a DV timeline, well of course. That’s 5:1 compression and interlaced. Graphics shimmer no matter what.

What’s the frame size of your image?
What’s the resolution setting of your screen? Larger than the frame size of your image?
Also, the Canvas looks the best at 100%.
Also, the Canvas does not display interlaced footage cleanly.
Also, the Canvas is definitely not the way to judge video clips at all. You need an external reference monitor.
Sounds like you’re viewing interlaced video in a Quicktime movie, therefore your image will get streaky / blurred during pans and motion.
Your DVD will not show you full HD quality, you need to make a BluRay disc to see full HD quality.

What do you mean “you put it into Applications?” That’s not how you install FCP.
You put in the original Discs and do the entire installation process. You cannot simply copy it over from one computer to another.

We also have an Apple Color forum here on the Cow.
As others have noted Color creates entirely new files leaving all of your original FCP media files intact. While your new (from Color) timeline shows the original file names in the timeline, a check of the Item Properties of any clip will show you that their real names are something like 1_g1.mov and so on. Color simply names each clip by their order number in the timeline.

FCP 8 will most likely not ship earlier than June based on previous releases. Do you need to edit with FCP 7 today or can you just wait for whenever Apple decides to release the next version?

RAID 5 or 6 array. We run Maxx Digital arrays here. Small Tree, Sonnet and Dulce also make excellent products.

We run the Maxx Digital Final Share SAN here. 7 workstations all tied together via Ethernet to 32TB of shared storage. We cut ProRes HD all day long doing this. Speeds are jumping now to the point where we will have Uncompressed HD and 2k support via Ethernet.
As for archiving and backup we use the WiebeTech RTX Trayless SATA enclosures which allows us to simply buy any SATA drive and use that for backup.
