AVCHD is a camera format generated in a metadata wrapper. If you have the wrapper that includes the mts files Final Cut will have no problem reading it. There is absolutely no reason and no excuse for the MPEG stream being separated from its folder structure. If you have that you’re good to go without spending any money or using a third party utility. If the MPEG stream has been separated ClipWrap is the price you have to pay.

The only thing that changes is the codec in which the material is rendered. If the material is ProRes and you change the sequence settings to HQ, everything has to be re-rendered to conform to the new codec. Unless your media is in film resolution you most likely have no need for HQ.

Neither is great for FCP. .dv is the muxed DV stream format used in iMovie, but needs rendering in FCP. AVIs will need rendering in FCP as well as the codec implementation is different from QuickTime, and FCP is QuickTime based.

Select an FCP project and press Cmd-I for get info. There’s a panel where you can set what application to open it with and a checkbox for all similar applications.

You use the Origin button in text controls to position the text. Or use Title 3D for more text options. Or Title Crawl for rolling or crawling text.

None of the setup list is bogus. Look at the Sequence Settings list in AV Settings. Those are the codecs and formats that work with FCP.
If you want to change the setting of a sequence go to Sequence Settings and click Load Presets. This will give you a list of available prests that are supported in FCP. You will not find H.264 in that list.
