Learning correct workflow is key. Contact the salesman who sold you the XF300. Let them explain to you everything about the camera. That is their job. You can also find everything about your camera on Canon’s website and by reading the manual that came with the camera.
FCP can choose the sequence setting for you automatically just by dragging a clip into the timeline.

Go to the Factory, FXFactory that is. https://www.noiseindustries.com. With the Pro version, you have access to manipulate and create your own FX.

If you do switch to Premiere, you are better off starting your project from scratch. Keep in mind when you are working with the native h.264 files from the camera, they are extremely compressed hd files. ProRes handles the footage much better in the edit suite.
If I was editing in FCP, I would not transcode to Proxy. I would transcode to ProRes.

Are you working on a Mac Book Pro? What hard drives are you transcoding to?
AVID Media Composer is also an option compared to Premiere.

I would say h.264 at a bit rate of 6mb unless you or they have a huge Dropbox.

Most of your problem has nothing to do with FCP. Try researching Mac OS display preferences. Arrangement to be exact.

I have to ask. Where are your camera originals? Always, always, always, back up all tapeless media cards. After the files are backed up then it is safe to reformat the cards.
