You apply Effect>Generate>Paint Bucket after the Audio Spectrum effect. Paint Bucket allows you to set a point which defines area with similar color/hue properties. So, you’ll need to apply Paint Bucket twice; for the top and bottom.
You can duplicate the effect. WHen you do, just remember to set the audi ospectrum path to a different position/mask from the first instance.

If the sign isn’t moving you should use a 3D layer, ie make the replacement logo layer a 3D layer and animate it’s position to make it go off screen.

The Cornerpin tracking data from mocha MAY BE appropriate or even ideal depending on the type of rotation and if there is perspective change in the area where you want your text to stick onto.
You mentioned micha’s purple grid providing a cue that the track is rock solid. The issue with using the term grid with respect to mocha is that there is a grid object in mocha and it does reflect the tracking accuracy BUT it does not specify where exactly the tracking data is/should be. For this, you use mocha’s Planar Surface.
For Corner Pin export, the four edges of the Planar Surface defines each of the points for the Corner Pin effect. For export of transform data, the center of the Planar Surface defines the Position and Anchor Point.

You can try AE’s tracker to track a small area on the edge of the Sun. If that fails, you can scale down the image drastically to reduce the tracking area of the entire Sun. It will be a good idea to set the Anchor Point to a point close to the Sun’s center prior to scaling. When tracking position, all you need is a single point – once tracking is done and data pasted onto a Null, you can Parent the original layer (un-scaled) to the Null.
In future, for such shots, you will want to put a small gaffer tape onto the camera lens and use that as a tracking marker. This is ideal if your camera is locked and the taped area can be easily removed or garbage matted out because it’s not required for the final composite.

You’ve set the Track Matte for the text correctly. However you’ve set its Blending Mode to Add; which picks up RGB values from layer below it. In fact, that’s how Blending Modes work – they combine the pixels within the Blending Mode with a composite of the pixels, of all active layers below it.

For the first effect, Google “Plexus Art of Flight tutorial” – essentially you link a Light to a Noise Effector and use the Light to distort text. For the second idea you have, this sounds quite simple. Is there something specific you’re not familiar with, with Plexus or AE?
