The description of the template tells you that the book part is 3d pre-rendered. Like I said, I think it’s a very clever way of mixing 3d and 2.5d. I mean, there are several parts where things intersect in a weird way, but if people aren’t looking for it, it’s probably fine.
You can actually bend layers in 3d in AE without FreeForm if you use the ray-traced renderer or (I think) the C4D renderer instead of the Classic Renderer. Be prepared for your render times to get worse though! And you don’t have as much control as you do with FreeForm.
Also, don’t forget, if you have After Effects CC, you also have a Lite version of Cinema 4D included for free!

That is a really clever template. You could just pay the $36 and see how they did it. ????
There are things that are pre-rendered (like the book cover) and then you have the pages which are a clever mix of 3d geometry (the pages) with AE’s 2.5 objects (the characters). This took a lot of work to put together.

In addition to what Ted says, After Effects has two 3d rendering engines built in. One is not being developed any more (called the ray-traced renderer) and the other one is being developed like crazy (and it’s the Cinema 4D renderer). They both render 3d geometry in AE’s 3d space.
After Effects isn’t a full 3d program though. However, it does come with a “Lite” version of Cinema 4D. So you can do some fairly impressive stuff without buying a full-fledged 3d program.

Just animate the position of a layer vertically and place another layer below it with a bit of space and parent it to the first one that’s being animated.

If you are talking about folders and items in the After Effects project panel, they are arranged alphabetically.

The resulting camera has values that you can view for all three directions.

It’s probably an effect applied somewhere in a precomp. Templates are notoriously complicated; you’re going to have to dig through the compositions in the project to find it. The easiest path is probably to go to the composition where you drop your footage, press the TAB key to pull up the mini flowchart, and then go to the comp that your footage comp is nested in. If the letterboxing isn’t done there, repeat! You’ll find it eventually.
