I don’t understand what you’re trying to do. You say you want it to have perspective and then you say you want an isometric look. To my mind, those are mutually exclusive, so you must mean something I don’t understand. ☺ Do you have some pictures that you can use to help describe your issue?

There’s a Foam effect that’s native to AE. If you tweak with it a lot, you can get some really neat effects. It’s even got handy things like flow maps that you can use that I haven’t found in any other AE particle plugins.

I like this idea! A couple of linear wipes (offset from one another with an expression for ease of use) would get you a tiny slice. You could then apply blurs and/or glow effects to make a little dot traveling along the line.

I’d use Fractal Noise with expressions to animate evolution/positioning/etc. and posterizeTime on the expressions to make it juddery like the example. ☺

After Effects is not made for a realtime playback sort of scenario like you describe. Adobe Character Animator, however, is! You can toggle between whole scenes with a keystroke as you request.

Or, perhaps easier, in your timeline panel, to the right of the text properties, you’ll see a little Animate flyout. Select all of your text and choose “Line Spacing”. Then animate the vertical amount. Note, you will also need to animate the position of the layer to make it be centered.
