Sounds like the audio of your first clip may be slightly longer than the video.
Go to the end of the timeline, then zoom all the way in. Trim the audio back to the video end, and then see if you can drop the clip into the timeline and keep the audio on track 1.

Go to the Menu properties and uncheck “Automatically Route Buttons”, then manually route your buttons.

Recordable DVDs can sometimes be a crap shoot as far as compatibility goes, but the format itself is pretty robust, if disc and player sales figures are worth anything.
But I think the OP’s question was about getting the educational version of Premiere CS3. If the OP qualifies as a student, then Encore CS3 will be included.

There is a location column in the Project window that should provide the path for any assets.

Subtitles are most often text files…check Encore’s Help for specifics about the formatting.
Encore also supports image-based subtitles (FabScript format, I believe) – again, check the help.

“The little arrow” sounds like a subpicture layer. It’s there, you just don’t see it by default.
To see it, click the ‘Show Activated’ button at the bottom of the Menu editor window.

Try this – on the computer that does not show this problem, build a DVD image. Then burn from the DVD image on the other computer.
Here’s a thought: were your button highlights text? Maybe your other computer doesn’t have the font used in the menu?

Encore CS3 can create motion menus for Blu-ray.
But reading your post, I’m confused – are you burning a Blu-ray disc from Encore?

It’s not meta-data that can be added at the DVD authoring stage. Instead, you add this information manually in Windows Media Player, then upload it to Microsoft’s database.
Note that if you are not mastering a DVD (having it stamped at a replication facility), then this information would have to be manually added to each burned DVD. The reason is that replicated discs all have the same disc ID (so you only have to enter this information once); burned discs do not.
