I’d like to help but I’m really not following. The pen tool should give you a point were you start and a point where you click again with a straight line in between, unless you hold the mouse button down a drag to bring you handles out and create a curve.

As said above, photoshop can’t fill in the area that you want to remove. If you remove a person, you’ll just be left will a blank spot of some color left where he or she was.
The idea of covering the guy with a plant is the easiest.

Erasing the person in front is not the problem. The problem is putting something in its place

I seem to think the problem may have been the guys computer I was testing my site on and not my site itself.
On his PC, it went to an error page every time the link was clicked.

If CYMK is checked, than your already in CYMK mode.
Also, upsizing to 300ppi is not the same as creating it in 300ppi to begin with. You should always attempt to create your art in the correct resolution.

If you are using an adjustment layer with a single layer, you can apply “use previous layer as a clipping mask” .If you are setting up a adjustment layer to a set, you need to create a mask manually.

The thing is, if you are going to set text in Photoshop, you have to design with a resolution in mind that can handle that text. If you are doing stuff for the web, you are stuck at 72DPI, which can’t handle text that small.
SO the bottom line is, you need to start you project at a resolution capable of doing what you want, maybe 300 DPI.
If you started at a low res, you can’t really increase it now because everything will be distorted.
Personally I never set small type in photoshop.
