Apart from ‘mute audio when not realtime’ under Preferences/Previews, I can’t find it neither/

As I understand it (it’s been a while since I’ve worked on the Mac), when using quicktime to view videofiles, it converts them for you in order four you to have good playback. So in essence, your not looking at your final render, but at a compressed version of it (I’d presume h264-mp4, or the likes).
I’d recommend using a different mediaplayer for reviewing your final renders (VLC, QT7, Catalyst…)

Wouldn’t putting the shape-stroke after the shape-transform (below) help?

option#2: add (at least) one keyframe to your camera, and make shure that ‘autokeying’ is turned off. When you have moved it, stepping through te timeline will have it snap back to it’s keyframed position.
option#3: add a ‘protect’-tag to your camera, now it can’t move at all. -
Use a two-node camera.
link the camera position to the position of Null2 via an expression.
link the point off interest to the position of Null1 via an expression.
