Boris himslef was interviewed in the latest “Digital Production Buzz” podcast last Thursday, and he said that the first Beta release has been already sent to testers. So the overall stability and functionality seems to be good enough to do initial functionality tests on the software.

Graffiti 2.1.x should work with V8.0.x. And I think it even should have been included in your V8 upgrade (not sure about that). If you have Graffiti V2, the upgrade to V2.1.2 is free.
You should get up to speed with Graffiti quickly, I think. It is much better than the old Comet CG. -
The Pre-V8 systems had a limit to ColorFX that could be used in a timeline; I think it was 50 different Curves/Levels settings combined per timeline. So probably you have used more than 50 different settings. If you use similar settings on clips make sure that you create a preset and use this, since you can use a preset as often as you like.

If you have some time (or if you get paid for this) you could download the Avid codecs from their website, and transcode into the Avid codec. I would suggest doing a short test first before you spend the time on transcoding everything.

Do they use Avid on PC or Mac? There may be some cross-platform (Mac to PC) QuickTime problems, although I am not sure about it. I think Avids should take QuickTimes and transcode them into their own codec.
