background-knowledge:

adobe media encoder (and all other DVD-asset-encoder), creating so called elementary stream, that means audio and video are seperated.

within your authoring-process you can put more than one video or audio into your timeline (at one time).

that´s necessary to have different audio-tracks for multi-language DVD/BDs or maybe different cam-angles as a mixed/multi-angle DVD.

so you need to have elementary streams before authoring to multiplex them again, to get all this working.

to switch to encore wont make any difference on the subtitles.

subtitle are 2bit RLE-grafics, like button-overlays as well, so you wont get any better result.

besides that, to create a STL from FCP XML is possible with annotation edit from https://www.zeitanker.com

encore has it´s own text-file-structure that could also been created with it.

of course you can add subtitles to encore-created blu-rays. encore does not accept STL-files, it has it´s own format for subtitles.

if you have a STL-files, I would suggest to use annotation edit from zeitanker to convert your subtitles.

this would be a one-klick-work…

this might be possible and is really depending on the codec you are exporting.

AVI is just a wrapper with a lot codecs within (it´s like bread and you´ll have the different sorts of bread). some AVI-codecs could be open within quicktime, some not.

you might just give it a try.

another possibility might be to open the AVI using mpeg streamclip (on your mac) and export it to a different quicktime-format.

there are a few workflows how to do this, but mainly you need to deinterlace your 1080i50 to 1080p25 and then slow it down to 24fps. this is called conforming and can be done with apple cinema-tools with a simple mouse-click.

you can also try to use apple compressor and do a real format-conversion while frame-control is working as well, but my results with it is not very good for HD-video.

so I would advice to use the ´conforming´-way as it is a common EUROPE<>USA-workflow as well.

closed caption is a NTSC-only thing – it wont be possible on any DVD-authoring-system as it is not a part of the DVD-specs with PAL.

that make sence.
brasila has PAL standart (but a special one with 60hz), and US-players could not playback PAL-framerates (25/50fps). so you need to convert the content to 1080i60 or (if it was recorded with 25/50fps) to 1080p24.

that´s your best choice.
