FCP 5 comes with an excellent tutorial on this. I find this to be a much better way to learn than with lengthy explanations.

Are you monitoring the audio through your deck? If so, look at the FCP audio meters. Are they registering the dropouts as well? If not, then your likely cause is a tiny glitch in your video. These glitches may not even be visible, but they can wreak havoc with the audio going out the firewire. The actual audio on the hard drive is unaffected, so if you’re monitoring through your computer, you’ll hear it. Try replacing the video at the affected segment with a cut-away and see if you get your audio back.

If you’re using anything earlier than the universal version, which I think is 2.2, don’t use “Best” quality. For a 79 minute piece, you should be fine with Single-pass VBR or even CBR. Two-pass VBR will take forever, and yield poor results.

What he’s talking about is that, at least on the old machines, all the firewire ports share the same bus, so their speed is limited to the slowest device connected, in this case, the deck. So, it’s a good idea to install a separate firewire card, and run the deck on that.

Thanks guys, for all the great advice. I am now erasing the old machine and installing a fresh copy of the OS. One more thing….
Can I re-install software without assigning a new Administrator name, so that the new buyer can start fresh, and put in his name when he first boots-up the machine?
