You can simply press U in the comp to reveal all the keyframes on all layers, then press Ctrl+Alt+A to select all the visible keyframes.
Alternatively, Press the shortcut for the property, say P for position to reveal position for all keyframes, then use the same shortcut to select all visible keyframes.

Try setting the start point(or first vertex as ae says) of the path to the top center indented point, and make sure it stays the same in both before and after shapes.

Emit some particles using a layer emitter in the shape of a ring. You have to tweak the shading and color lifespan and other settings of particular in order to achieve the smoke feel.

Sounds like you are mainly interested in compositing. I would start by learning the basic concepts of compositing, For e.g. Green Screen, Matchmoving, Wire removal, Object cleanup, integration of cg objects in live footage.

You can create a sliced up fruit in the 3d software and then import and animate it being sliced up using element inside after effects.

There is a bug in cc2015 v13.5 which cause preview issues. Try updating to the latest version for the bug fixes.

You can simply duplicate the layer and create a mask around the center part. Give it a little feather and invert it to constrain the effect on the edges.
