Go to the window menu of the Project Panel and select Metadata Display. Twirl down Premiere Pro Project Metadata and enable Usage Video and if you want Usage Audio. OK
Now go to the Project Window and you will see which clip has been used and which one has not been used.

If the source is interlaced and the endprocuct is dvd dont make it progressive, just leave it interlaced in Upper Field.

CS5 has improved significant when it comes to scaling down HD to SD
You can export directly to sd m2v with AME or go through DL and let Encore do the math.
