Pick a reference color like the tone of the wall to match (the iphone is more blue, btw) but using scopes-only is a little misguided; the images are not near enough in angle to match purely from the scopes. The iphone image is far more in the shadows for instance.
I would try to match the iphone to a clip on the 5d from a similar lighting or angle. This will help you make some decisions about there being color cast in the shadows, for instance.
The iphone is, on the vectorscope, much more saturated. I would drop the saturation until the general size and strength of the vectorscope matches the 5D.
Although I could go on forever, your best bet is to look up tutorials. This is a decent place to start:

Do you have one of the newer versions of neat video? Open the effect, go to preferences and you can benchmark it. It should take advantage of nVidia CUDA processing, otherwise it’s a very heavy effect… but not nearly enough as to have a 20:1 encoding ratio.
How is the rendering/playback speed for MPE in software mode?

In the meantime look into file databases. They hold metadata in a database rather than tagging directly, or in-directly with the case of XMP files, with metadata. These database programs are usually far more generic though.

Yes, After Effects is known to recalculate render time like that if the file starts off with few or no effects and then hits a section with 8 layers.
One of the best things to do is watch your CPU temp. Modern processors will throttle speed (slow down) if they aren’t in their optimal temp range. That’s external of your project or available hardware.

Thanks for the compliments.
I’ve been trying to take advantage of the trim tools and the source/project monitor. With that said, I’ve switch my method of working.
I do use merged clips. I, however, have an internal app to convert merged clips back to their original counterparts. It’s super messy and has a lot of caveats so I strictly save it as the last editorial step before it enters finishing.
For the average user, I would probably suggest editing with scratch audio as much as you can, then using plural eyes on the final timeline. The resulting timeline will have gaps, so it’ll need to be trimmed/conformed before going to finishing.
Luckily both methods seem to introduce only little extra work if a revision is ordered.
YMMV but I think it’s a good trade off because you can use more Avid-style cutting and save time there. The Bin-to-source-monitor workflow allows you to browse metadata in the bin and start working. Try finding a circle take when scrubbing through a timeline; gets messy fast.

Is that a quality decision? There is proof of AE adding a very very slight contrast adjustment to h.264, does that bypass?

What does the Vegas EDL look like? Can you paste a portion?
If it looks like a standard EDL then you could rename the extension to .edl, import it into Premiere, and relink the footage.
Exporting individual cuts within Premiere is very cumbersome. I may import the sequence into After Effects and use scripts (I’m sure one exists) to split the layers into individual comps that you can queue for encoding.
