You’d want to use the Convert Anchor Point Tool, under the pen tools. Click and drag on any point to make it into a curve. Conversely, you can click on a curved anchor to make it an angle.

My initial thought would be to put all of your structure, the black ink, in a new layer on top. Then do all of your coloring in the lower layer – maybe even create multiple ‘color’ layers, like; base, shadows, highlights, etc.

Live Trace is great, but I’d avoid it for creating a logo.
I’d recommend that you vectorize the logo in AI, manually, so that you have a resolution independent master.Once you have that, you can attempt coloring techniques in Illustrator, or scale the art in Photoshop to whatever size and then apply the colors and filters.
Depending on how it was built in Photoshop, you may already have many of the components that you need by using Photoshop’s File > Export Paths to Illustrator – if you used paths to create the original.
Otherwise, you’ll have to redraw it in Illustrator.There are techniques for creating Photoshop-like effects in AI, but the effects in your example are probably best created in PS.
Coloring in AI can be an extensive subject. There are so many approaches; flat coloring/shading, gradients, filters like inner glow, gradient meshes, blends, opacity masks, etc. This can become a very advanced project.
If you decide to go with the Live Trace approach…
- Remove all of the filters in Photoshop, and create a black & white version of the file.
- Flatten and upscale the art about 400% using Bicubic Sharper.
- Save as a TIF w/ LZW compression or PSD
- Open in AI for Live Trace and Object > Expand

You’ll certainly be able to create and edit the graphics in AI. The AI files will be your master project files.
As for display on LCD, presuming that this LCD is connected to pc, it might just be a matter of using a search engine to find an appropriate slideshow app.
You may even already have an app on the system.
You can probably find many slideshow apps with a standard push or slide transition, plus more advanced transitions.Check your display resolution settings for the monitor, make your AI comp whatever size you need to work with whichever transition you decide to use.
Finally, you’ll export image files that meet the specs of the slideshow app, possibly – JPEG / RGB / 72ppi.Just some general thoughts.
