I find I use my Schoeps cmc641 super cardioid a lot more than my 416, 816 or NTG8.
If you haven’t heard one of those, you should try one.

Wow, an AKG 568b. I’ve never heard of one (and I’ve heard a lot of mics).
The AT4073 is very sensitive. This can be a very good thing for nature videography, but horrible if you’re shooting around a high noise environment.
Have you tried your 4053?
My Schoeps cmc641 works very nicely outside. It’s a similar configuration, just a lot smoother.
Maybe try the 4053 to see what you can get out of it before spending the money on the 4073.

Hello Rob and welcome to the Cow Audio Forum.
You have described a one-legged stool. A “seasoned shooter”, and two people with little or no experience.
Lighting and Audio, you will soon learn, are also required. Your seasoned shooter, is more than a camera. He’s a functioning brain with arms and legs. The same are required for lighting and sound……and editing, etc.
Your presumption that the right mic will result in acceptable sound is typical, but flawed. I could present you with the most expensive gear on the planet and you could still end up in the ditch.
My suggestion would be to hire pros for all three positions and watch them closely for several shoots to see if you can figure out what’s going on. Then try one yourself that can, if necessary, be reshot to see how well you did.

YOu could try to tighten up the tracks you recorded with iZotope RX3. Can’t say how well you’ll come out.
In the future, sound blankets on the floor under and in front of the talent.
C Stands with more sound blankets to the sides and perhaps overhead.
Get the mic as close as you can. 12″ or closer. What mic are you using?
Sometimes a lav wins in this situation.
Best advice I can give, find another location with some decent acoustical treatment.
