I have a G5, but there are a number of different versions.
I’m not sure what you’re trying to do, bring stereo digital audio into your G5 Mac through the optical SPDIF port for what purpose? Not all applications will be able to use that port for input. The ones you use may.
What noise? Internal fans cause mechanical noise. That shouldn’t be any problem with an optical input. There were some noise issues on the firewire ground bus due to a poorly designed power supply in some G5 Macs. I had one and Apple replaced it.
As to which converter is better, it’s hard to say. I use the optical input for the output of my CD recorder. That lets me play the CDs though the G5 and out the G5 unbalanced analog ports.

Try more mics. The more complex the sound field the bigger they sound. Also, if the mics are too far away it’ll sound small.

Tough call. There the Holophone ncode box that runs at mic level. It’s a 5.1 box but you don’t get Dolby E.

The ME66 may be repairable by Sennheiser. If you are in the US, contact them in Old Lyme, CT.
The ME66, while ubiquitous, is not a world class shotgun. The Sennheiser MKH 416P48 is. It will serve you well.
If you ARE shooting indoors the ME66 (or 416) would not be my first choice. Presuming you can’t afford a Schoeps cmc641 supercardioid, the next step down would be an Audio-Technica AT4053a or an Audix SCX-1 HC.

I hear the EQ difference as less “chest” in the Rode. That’s similar to a boost somewhere else higher in the frequency response, but not quite the same. I think it makes the 416 sound a little smoother.
Yes, selfnoise are very similar and very low. Some of that may be the exquisitely low noise of the 788T.
788T is working nicely. I need to do the firmeware upgrade and have asked that they trip the input peaks AT 0dBFS rather than at an unspecified number of dB below 0dBFS. I only want to see red when I’m actually in troble. The output LEDs are programmable, but the inputs aren’t, yet.

You’ve given no information as to how or where you’ll be shooting your documentary. Inside, outside, in houses, big rooms, small rooms. How will you support the mic. Where do you intend to put it.
Shotguns aren’t the best choice for many acoustical environments. Hypercardioids are better, but may not have the reach. A hardwired lav might also be better.
