when you create outlines for text a new layer is created. turn off the text layer than select the new outlines layer and apply the stroke effect to that new layer.

You could also look at using Reduce Interlace Flicker and set it at .5…

So what you are looking to do is have a sheet of rectangular paper peel away with the mirror image freeze of the face? If so, then just do a simple track of one spot for paper motion, then maybe use the page roll effect with mattes.

Are you doing this in order to maintain proper levels for NTSC? If so, then use levels adjustment and set your black output to 10 and white to 245.

For starters, how did you render the fields? And then next are you rendering to a DVD format mpeg2 file from AE?
